The marriage of wine and food is a beautiful thing; match a Chardonnay with a simple broiled salmon is a perfect marriage. Matching wine and food is all about weight and balance. Historically red wine is considered appropriate with red meat and hearty pasta dishes, white wine with fish and many chicken dishes. These are not hard and fast rules, and the real idea here is to serve lighter wine with lighter food and hearty wine with hearty food.



Red wines as a category are distinct from whites in two main ways

  • Tannins--many red wines have them, few white wines do--and flavors.
  • White and red wines share many common flavors; both can be spicy, earthy or floral.
